Sweet & Savory French Toast with Citrus Rosemary Goat Cheese and Honeyed Beets

I was at a local Farmer’s Market yesterday and I bought a loaf of citrus herb bread and the first thing I thought was, “This would make delicious french toast!!” But what do I put on it? The following recipe is what I came up with!

Honeyed Beets:

about 2 cups diced beets (freshly boiled)

The rind and juice of one large orange

1/2 cup honey

2 tbsp butter

pinch of  kosher salt

1/2 tsp of fresh chopped rosemary

Chop and boil beets until a fork goes into them easily. Drain.

Whisk together orange juice, honey, rosemary, salt, and 1/2 of the orange rind.

Heat pan to medium and add butter, beets, and lemon honey mixture.

Cook until most of liquid has evaporated leaving beets glazed and a little sauce. Remove from heat and cover to keep warm.

Citrus Rosemary Goat Cheese:

1/2 tsp chopped fresh rosemary

1/2 rind of an orange

1/4 cup goat cheese

Cream all ingredients together.

Savory French Toast:

2 eggs

splash of milk or cream

2-4 slices of rustic bread cut in half (I used a citrus herb bread I found at a local farmer’s market)

salt and pepper to taste

Whisk together eggs, milk, salt, and pepper. Dip bread in and coat with egg mixture. Cook in a well buttered skillet for a few minutes on each side.

Assemble and enjoy!
